This is my fifth pancake recipe. I must really like pancakes. Or I have not come up with my favorite recipe yet. Here is another one, and I think I am making progress.
- 1 ripe banana
- 2 eggs
- a splash of coconut milk
- a dash of ground cinnamon
- a pinch of salt
- coconut oil to fry in
- vegan Nutella and peanut butter for topping
Put all ingredients in a blender and blend until smooth. Fry in coconut oil on medium heat. 🙂
Swedish pancakes are made with no baking powder. Then you add your toppings, which usually are whipped cream and jam, and roll them up before you cut them. So these are kind of a twist on Swedish pancakes.
