Gluten and Dairy Free Swedish Pancakes


  • 3 eggs
  • 4 dl potato milk
  • 2 dl rice flour
  • 2 tbsp coconut sugar
  • a generous chunk of diary free butter or coocnut oil 🙂
  • a pinch of salt


In a frying pan, add the ‘butter’ and let it melt.

In a large bowl, mix all ingredients together. Then add the melted ‘butter’ and whisk until the batter is smooth.

Add ‘butter’ in the pan once again. Fry your pancakes on medium-high heat.

Serve with jam and cream, butter and sugar, or vegan Nutella and peanut butter. At least these are some of my favorite topping combinations.
