Shiitake Dashi


  • 5 dl water
  • 3 dried shiitake mushrooms


Pour the water into a glass jar. Put in the mushrooms and a weight on top so that they are completely submerged in the water. Let soak at room temperature for 20 minutes or in the fridge overnight. Pick up the mushrooms, squeeze out the water. Strain the water. Done! 🙂

These mushrooms had a will of their own as it appears but I managed to wiggle them down.

When I have used this as the base for miso soups together with kombu and katsubushi it has turned out amazing. Those are my best miso soups, and those are not just my words. 😉
