One evening I got such a craving for rich Swedish chocolate balls. Since there are a couple of foods I need to avoid to keep my health I decided to tweak a recipe to suit me. This time I made a grain-free alternative.
- 10 dates, pitted
- 1 dl almond milk
- 2 tbsp coconut oil
- 2 tbsp drip coffee, cooled
- A pinch of salt
- 2 tbsp cacao powder
- 1 dl coconut flour
In the stand mixing bowl, add the dates, almond milk, coconut oil, and coffee. Switch on the mixer at low speed and let it blend the ingredients together. It will take a moment for the dates to turn into a lovely mush.
Then add the salt, cacao powder, and coconut flour. Blend until it is a cohesive mixture.
Coconut flour gives the mix a different texture than if you would use rolled oats. It could be a good idea to add 2 tbsp chia seeds. If you do not mind grains you could of course switch the coconut flour for rolled oats. 😉
